Amazing outcome of Chicory

I started to put chicory seeds into soil to stop weeds last year. The outcome is outstanding! I often pick its leaves for cooking. It tastes a bit bitter. I guess “bitter taste is healthy” I’ve got all sort of recipes from Youtube and been eating its leaves since last year. This year (2017), I let them grow without picking. I am amazed to see the flower come out as shows as the photo.
